Here's a Pinot Gris made with full fermentation on the skins, followed by aging in older French oak barrels. The "red Pinot Gris" is beautifully floral, with aromas of dried rose petals, thyme, orange peels and peaches. There's great acidity here, with a touch of tannic structure. Flavors of tangerine and quince mix with a chalky note that must be what licking amphora tastes like. — Michael Alberty
