Made from 100% Pinot Blanc and follows organic viticulture practices. The grapes are hand-harvested early to preserve their natural freshness. After the first fermentation, a second fermentation in the bottle follows, and the wine ages on its lees (sur lie) for at least 24 months. This process contributes to complexity and texture. After disgorgement, a small dosage of 3 grams per liter is added, resulting in an Extra Brut.
This wine has a pale gold color with fine, persistent bubbles. The nose is elegant and fresh with aromas of green apple, lemon zest, white flowers, and subtle hints of brioche and almond. The palate is dry and vibrant, with flavors of citrus, pear, and toasted notes. The lively acidity leads to a clean, mineral-driven finish.
