Sangiovese (60%), Montepulciano (25)%, Sagrantino (15%)
The Pipparello is dense, brooding, and shows exquisite concentration. The nose overwhems with earth and fruit and spice - black olives, compost, black plum, and sandalwood. The palate is broad, fleshy and masculine with grippy tannins that are still somehow fine as soft sand. The palate is herbal, rich in soil notes, rich and ripe black berries, and a finish that has a distinct iron minerality.
After the alcoholic fermentation this wine spends a year in stainless steel tanks and then two years in large oak barrels and is released after an additional year of bottle-aging. No added SO2.
