Made in León by a very small producer and his single herd of goats, these flat logs of goat cheese are coated with a velvety, bloomy rind. Underneath are two distinct layers of texture and flavor; the center is fudgy and a bit flakey with a milky sweetness and lemony brightness, surrounded by a creamline that's gooier and a bit more earthy.
