Domaine Bourdry has been in production since the 1400s and is currently run by the 15th consecutive generation of the family. The estate has been biodynamic since 2016 and the winemaking is very old school and hand-off. The whites are aged sous voile for 3-4 years in old, neutral barrels. Their chardonnay shows notes of dried apple, almond, strong minerality, and a touch of oxidation. This wine benefits from decanting or breathing for an hour or two before serving, and is built for long term aging. Classic Jura winemaking without the price hype.
