Ripe and spicy with intense notes of berry fruit, pepper, and dessert spices. Spontaneous fermentation, with native yeasts, in stainless steel at low temprature. After fermentation, the wine is pressed and aged in 300 l French oak barrels (2nd use). Racked off after 12 months, then cold-stabilized and bottled without fining or filtration. Ultra-low sulfite.
