Demoiselles de Falfas has a very feminine character. Mainly made with Merlot from young vines this is a round, generous and crunchy wine full of black fruits. Vibrant and rich on the palate with discreet toasty notes.

With 20 hectares of vineyards planted on rolling hillsides of Bayon in the Cotes de Bourg, Chateau Falfas has a winemaking heritage that dates back to the 14th century. The Chateau was in fact one of the very first in Bordeaux to practise organic and biodynamic methods. Today Chateau Falfas is owned by Veronique Cochran, who is building on the traditions of the past with a very simple philosophy: the best wines are not made but rather grown. She remains passionate about practicing biodynamic principles to extract the very essence of the terroir, producing authentic, rich and generous wines.
VARIETAL: Merlot (75%), Cabernet Sauvignon (25%)
VINEYARDS: Extending over the hillsides and sloping south around the Chateau - less than half a mile from the Gironde river. Veronique Cochran farms 20 hectares of Merlot, Cabernet, Cabernet Franc and Malbec on the pedigreed calcareous, clay and silica soil over a deep limestone bedrock of fossilized oysters, the classic combination for growing great wines in Bordeaux.
VINIFICATION: The grapes undergo a long maceration of anywhere from 15 to 25 days, however great care is taken not to extract dry tannins. Chateau Falfas uses only indigenous yeasts for long vinifications and eschew such practices of chaptalization, artificial concentration (common in Bordeaux) and filtration. Les Demoiselles de Falfas is aged in tank and is meant for early consumption. Limited yields and rigorous selection of the harvested grapes are standard elements at Falfas.
TASTING NOTES: Aromas of soft, ripe fruits on the nose, with an explosion of red summer fruits and strawberry jam on the palate. A delicious wine with lighter tannins, made to be consumed within 6 years of bottling.
