The Black Label program celebrates the highest expression of a cheese at a moment in time. Our Sensory Team constantly monitors developing wheels, earmarking our most promising and following their trajectory. As peak ripeness nears, a Black Label batch is selected.

Alpha Tolman is distinguished as Black Label by a new treatment: we apply several finishing washes of a spruce bark infusion. This imbues a rich umber tone and a woodsy essence to the natural rind.

The infusion is a deeply-hued, aromatic liquid created by steeping spruce cambium bands before we apply them to Harbison. Reclaiming this brew ties another cheese in our collection to the woodlands at our pastures’ edge.
