What a cool cheese! Made to be "friable", this cheese is actually baked in an oven just after the curd is formed, creating a bouncy, strong curd and nice toasted exterior. It does equally well on the grill (and used like it were bread) or in hot coffee, as the Finns do. (check out the link below)
