Our applewood hot-smoked Steelhead trout is kippered style, smoked in small batches at family-owned smokehouse, Samaki, located in the Hudson Valley. "Hot" refers to the high temperature at which it is smoked (145 degrees), not the flavor profile! Super flakey and decadent texture, delicious in a variety of preparations.
