One of our most versatile and beloved fresh sheep milk cheeses, our Fresh Plain cheese is simply sheep milk, cultures, a tiny amount of natural rennet, and a touch of salt. It’s patterned after Brebis, a traditional French sheep milk cheese, and is similar in texture to ricotta.
Our Fresh Plain cheese is lactic style and fresh, meaning it’s an un-aged cheese. The cheese ripens and drains for 48 hours, after which it is promptly packaged. This sheep milk cheese has a soft, delicate curd. It crumbles well when cold, and becomes more spreadable as it warms up. For people familiar with Fresh Chèvre, that is a good comparison; but without the gaminess sometimes associated with goat cheese.
