These traditional-style anchovies are produced using a craft process which differs from the method used to produce other anchovies in olive oil. They are cleaned, salted and filleted by hand with great care without removing the skin. This gives them a silver hue and conserves all the original, intense flavour of the salting process. They are then marinated in extra virgin olive oil and a touch of parsley. Great for using in recipes, but also ideal as an appetizer.
