Delicate creamy-white spears of perfect Navarran asparagus. No fibers to mar that smooth-as-silk texture. Don't do too much to these - you want to really be able appreciate that gorgeous texture and briny, "spring" flavor. Dress them simply with good olive oil and vinegar. Maybe a bit or orange juice.
