In our minds, Isaias is an ideal coffee farmer to look to each harvest season. He’s a third generation farmer who grows a wide range of coffee varieties at his La Fincona farm in the Santa Barbara region of Honduras. Where most of his country’s brethren sell their coffee cherries to intermediaries for processing, Isaias, his brother Nahun and his father Andres process their coffee on-site and continue to experiment with fermentation techniques and applying different finishing methods each season.
From the 2024-2025 harvest cycle, we’ll present two Isaias lots; this, the first, is as approachable and pleasant as anything in our menu’s history. A mega field blend, comprised of Catuai, Bourbon, Catimor and Pacas varieties, is fully washed with no silly fermentation tricks here. Just classic proper tending, picking, washing, floating, drying, resting and milling, giving ultimate sweetness, roundness and love in the cup.
