The long process started with a constant fire, 1600 pounds of pineapples were buried (in spiral formation haha) under the fire, dug up, fermented with Champagne yeast and then distilled. The process is reminiscent of Mezcal, but this spirit lies in an undefined category. Tropical, savory, spicey, smokey with a sleek texture.
